H&R Fidesser run a small, Demeter-certified organic winery in Retz, with small plots in the Obernalber vineyards of Sonnleiten, Grillenberg and Golitsch. The vineyards are exclusively planted with white wine varieties (Grüner Veltliner, Riesling, Traminer, Pinot Gris).
H&R Fidessers are above all winegrowers, they want living soils (partly lime-free granite weathering, partly calcareous Parabraunerde) and a natural balance in their vineyards. They therefore work according to biodynamic principles (Demeter), taking into account the rhythms of the seasons and lunar activity.

The harvest is carried out manually using small crates. All musts ferment spontaneously with their own yeasts. The aging of the wines is as simple as possible (no must enrichment, no addition of enzymes, no temperature control during fermentation, no chemical deacidification, no refining, no filtration). Some of the white wine grapes ferment on the mash. Most of the wines are aged in used wooden barrels. Only very little sulfites are added, usually just before bottling (in some wines, no sulfites are added at all).

H&R Fidesser produce unaltered, honest, natural wines.
